The history of “Malda” district basically tells the tales associated with the ruined city of Gaur and Pandua. It was in the year 1204 AD. when the rule of Sena dynasty ended here and the Mughals and Afghans invaded Bengal. Mughals are the one who came up with the concept of “sherbet” in India. Now let’s talk about the history of “mango”. It has been cultivated for well over 4000 years in India. The mango cultivation in Malda and its historical associations date back to very early times. The mango of Malda district is mentioned in the Hindu epic Mahabharata. Its cultivation started before Pala and Sena Dynasty. The most iconical variety of mango grown here is “Langra”. We came up with the concept where we put the mangoes of Malda tying a knot with the sherbet (shorbot) of Mughals and placed it together into a very famous summer refreshing drink of Bengal ie. “Aam Pora Shorbot”. A drink made by roasting green mangoes over open flame and then mixing with bhaja moshla. Taking this concept a step forward in modern mixology using modern gastronomy. We curated a clarified version of “aam pora shorbot” pairing it with the subtle smokey and caramel notes of blue agave tequila. Finished with our homemade spice dust. A flavour that plays around with your palate and instigate questions in your head.
